Salmon, Strawberry, and Boursin Basil and Chive Tartare
Yield: Serves 6
• 1 Boursin Bouquet of Basil and Chive cheese
• 12 oz fresh salmon, fi nely diced
• 6 strawberries, fi nely diced
• 6 large basil leaves, minced
• 1 Tbsp. chives, minced
• 3 Tbsp. olive oil
• Juice of 1 lemon
• Sea salt
• Fresh ground pepper
1. In a bowl, combine olive oil, lemon juice, basil, and minced chives.
2. Dice salmon and strawberries. Add the oil mixture, season with salt and pepper, and toss gently.
3. Spoon mixture into verrines and garnish with Boursin Bouquet of Basil and Chive. Decorate with basil leaves and chive sprigs. Serve with croutons
