Quesadillas with Smoked Breakfast Ham, Pesto & Cheese

- • 4 slices Piller’s Simply Free™ Smoked Breakfast Ham
- • 2 tsp vegetable oil
- • 1 cup onion, chopped
- • 2 tsp garlic, crushed
- • ¼ cup pesto sauce
- • ½ cup part-skim mozzarella cheese, grated
- • 2 Tbsp Parmesan cheese, grated
- • 4 large whole wheat flour tortillas
- Spray a large non-stick skillet or grill pan with cooking oil and place over medium-high heat.
- Add the smoked breakfast ham and sauté for 3 minutes until lightly browned. Dice and set aside.
- Heat the oil in the same skillet over medium-high heat. Sauté the onion and garlic for 5 minutes or until the onions are tender and browned. Stir in the pesto, cheeses and diced ham.
- Divide the mixture among the tortillas, placing it on half of each tortilla. Fold the other half over top.
- Heat on a grill pan or in a large skillet for 2 minutes on each side. Cut each tortilla into 3 wedges, making 12 wedges in total.
