The Renowned Montrealer visits Toronto for the 2013 Delicious Food Show

otg: What are you looking forward to most at the 2013 Delicious Food Show?
chuck: Are you serious? Meeting my idol Martha Stewart! I’m a big fan of her cooking, big fan of her style and of her cook books. I’m also looking forward to getting some face time with the fans and exploring the different foods that the show has to offer.
What can guests expect to see from you on the Food Network Celebrity Kitchen presented by the Home Depot Canada this October?
Lots of free bad jokes! A little cooking and I’ll be there to answer any outstanding questions anyone may have. People see me cooking on TV so it’s nice to be able to connect face to face. I think we can all look forward to having a good time.
What three words describe your philosophy in the kitchen?
Fresh, simple, and of course “Delicious”.
What’s the best part about your newest cookbook?
Other than the recipes and the terrific photos, I think what I like most about it is that it is a biography of myself, the TV show “Chuck’s Day Off” and what goes on behind-the-scenes at our restaurant.
Tell us about your latest tattoo.
I just got a new one last week by Alicia at Trouble Bound Tattoos in St. John’s NFLD. (She’s the best). It is a series of kitchen tools — a whisk, spatula, rolling pin, cleaver, oyster schucker — but all super mini size.
Who or what is your biggest inspiration?
I would have to say it’s the unsung heroes of food. Those people we never see or hear about — the farmers, the fishermen — the ones who every day are out there gathering and growing the food we put on our tables.
What autumn produce are you most looking forward to cooking with this season?
There are certain mushrooms that are terrific and of course there are great root vegetables; but right now I can’t wait for turnip greens!
What restaurants will you be eating at while you’re in Toronto for the Delicious Food Show?
I want to try Home Of The Brave and I have never been to Canoe, so I want to check that out as I’m a big fan of Anthony Walsh. And whenever I’m in Toronto I try to go to either Actinolite, Bar Isabel, Buca, Chantecler or Parts & Labour.
With your shows, appearances and busy schedule you’ve had the opportunity to travel a lot. What’s one place you’ve been dying to visit but have yet to have the opportunity?
What can we see from you next? A third restaurant, perhaps?
Perhaps. Right now I’m just focusing on the two restaurants that I have and finding the time and energy to do what I love to do.
