This is a great recipe for a quick family dinner. This delicious chicken meal is made from the healthy Kamut pasta.
Chicken Cordon Bleu Pasta

• 1 package Kamut Rotini pasta
• ¼ cup butter
• 2 Tbsp olive oil
• 2 Tbsp all purpose flour
• 1 small onion, diced
• 1 clove garlic, minced
• 1 cup Swiss cheese
• 1 8-oz package cream cheese
• 1 cup heavy cream
• 1 cup ham, diced
• 4 chicken breasts, diced
• Salt and pepper, to taste
In a medium sauce pan, over high heat, cook diced chicken in 1 Tbsp olive oil until cooked, about 5 minutes. Place in a bowl and reserve.
In the hot chicken pan, over medium heat, add butter and 1 Tbsp olive oil. Add onion and cook for 1 minute; add garlic and continue to stir until translucent. Add flour and stir until lightly browned.
Stir in cream and cream cheese. Once cheese is melted add Swiss cheese and diced ham.
In a large pot of boiling water, cook Kamut rotini until al dente, 8–10 minutes.
Combine chicken, rotini and ham sauce and serve while hot.
Optional; place pasta mixture in a medium sized casserole dish, top with more Swiss cheese and panko bread crumbs. Cook until hot and bubbly.
