Cherry Tomatoes Stuffed with Boursin Bouquet of Basil and Chive and Toasted Pine Nuts
Yield: Serves 6
• 1 Boursin Bouquet of Basil and Chive cheese
• 24 medium sized cherry tomatoes
• 1 Tbsp. toasted pine nuts
• Chive sprigs for garnish
• Fresh basil for garnish
1 Slice off the top of each cherry tomato and scoop out insides with a small spoon. Season with salt.
2 Toast pine nuts in a skillet (2–3 minutes).
3 Stuff each tomato with Boursin Bouquet of Basil and Chive, garnish with toasted pine nuts, and decorate with basil leaves and chive sprigs.
