BBQ Ribs w/ Melitta
This sauce adds a sweet and spicy tang to beef, chicken and pork. For best results, apply to meats in the very last stages of cooking, as the sugars in the sauce can char during prolonged periods on a grill or under a broiler.
- 1 large Spanish onion, diced
- ¼ cup unsalted butter
- 1 cup brewed Melitta Organic Whole Bean coffee
- ¾ cup ketchup
- ¼ cup H.P. sauce
- ¼ cup cider vinegar
- ¼ cup brown sugar
- ¼ cup honey
- 2 Tbsp Dijon mustard
- 1 Tbsp ground black pepper
- 1 Tbsp smoked paprika
- 1 tsp ground cumin
- 1 tsp salt
- dash of hot sauce
1 Heat a large saucepan over medium high heat. Add butter. Add onion and cook, stirring occasionally, until soft and translucent.
2 Add coffee and continue to cook until the liquid is reduced by half.
3 Add remaining ingredients and simmer for approximately 10 minutes, stirring occasionally.
4 Season with as much or as little of your favourite hot sauce as you wish.
5 Par-cook your ribs using your favourite method. Place the ribs on a hot BBQ. Grill for about 5 mins on a well oiled grill.
At the 4 minute mark, just prior to flipping sides, brush liberally with the BBQ sauce. Repeat on second side.
6 Remove from grill and enjoy with extra BBQ sauce for dipping, if desired! Yield: 4 cups.
