[colored_box color=”grey”]Tequila is often synonymous with great nights and horrible mornings but this amazing spirit really needs to be re-examined in North America. Great tequilas are like fine cognacs in that they should be sipped and not used as right of passage shots when becoming legal drinking age.[/colored_box]
A few misconceptions that I would like to clear up. One, tequila is made from the agave plant which is not part of the cactus family but is rather from the lily family. Two, the “good stuff” does not have a dead animal, insect or anything else in the bottom! Three, tequila and mezcal are not the same spirit even though they both come from mexico, it is the process in which the cook the agave hearts that gives them vastly different flavour profiles, with mezcals coming out very smokey from charring the hearts and tequila coming out herbatious from steaming. Fourthly, the three main categories of tequilas are blanco (not aged), reposado (minimum aging) and anejo aged more than 9 months. Fifthly, salted rims kill the flavour of your tequila and the cocktail by deadening your palate, try salting half a rim to give the lips that will be enjoying your recipes a chance to taste them pure.
Last but not least the best margaritas are always shaken not blended!
1. Cazadores® Paloma
- 1 part Tequila CAZADORES® Reposado Tequila
- 2 parts grapefruit soda
- Splash limejuice
- Splash club soda
Pour ingredients over ice in a tall, half salt-rimmed glass.
2. Don Julio Blanco
- 1.5 oz. Tequila Don Julio Blanco
- 0.5 oz. Fresh Lime Juice
- 0.5 oz. Simple Syrup
- Fresh Mint, Muddled
- Fresh Limes, cut into small pieces
- 1 oz. Club Soda
- Mint Sprig
Put all ingredients except club soda and mint sprig into a mixing glass. Add ice and shake vigorously. Add club soda, shake once, and pour into a highball glass. Garnish with a mint sprig.
For an entirely new way to savor this iconic drink, simply replace rum with Tequila.
3. Bird of Paradise
- 1 oz. Herradura anejo
- 3 oz. Passion fruit juice
- 1 oz. Guava juice
- 1 slice of orange
- 1 tsp of manuka honey heated.
Add ingredients into a shaker half full of ice except for the honey. Shake until the orange is pulverized and pour ice and cocktail into a margarita glass. Heat the honey until hot and thin. Mix thoroughly into the cocktail and enjoy.
4. Cuervo & Pineapple
- 1.5 fl oz JOSE CUERVO ESPECIAL® Silver Tequila
- 3 fl. oz pineapple juice
Combine both ingredients in a shaker with ice. Shake well. Pour into an ice filled collins glass. Garnish with a pineapple wedge.
5. Hotel California Sunrise
- 1 oz. El Jimador Blanco
- 3 oz. Mango juice
- 1 oz. Orange juice
- 1.5 oz. Grenadine
- Splash of lemon juice
Build over ice adding ingredients in order listed pouring the grenadine down the side of the glass.
6. Bombay Sapphire® Collins
- 11/2 oz. BOMBAY SAPPHIRE® Gin
- 1/2 oz. fresh lemon juice (approx. the juice from half a lemon)
- 2 tsp. of sugar or 3/4 oz. simple syrup
- 3 oz. club soda
Pour all ingredients into a glass and stir well to dissolve the sugar. Top up glass with ice and garnish with a lemon wedge.
